Pineapple looks like a cylinder shape fruit which grows upwards on a low bush. It

Pineapples are originated in the South and Central America. It was then introduced
to other countries including Spain and India. But in the West Indies there was a
traditional symbol of hospitality.
 | BUYING AND STORAGE
|
Choose pineapple that are plump, slightly soft with a sweet fragrance and the
heaviness for its size. To test for the ripeness, gently pull out one of the centre top
leaves; it should be able to come out easily. Avoid fruit that is bruised and the leaves
that are turning brown. When cut it can be able to keep up to 2 days in the refrigerator.
 | PREPARATION AND USE

Use a knife and cut off the top and the bottom bit of the pineapple. Then you
stand the fruit upright and slice off all the skins and using a small sharp knife,
carefully remove all eyes, and then with the apple corer, remove the core.
Pineapples can be serve fresh in rings or cubes. Can be added to fruit salad, tarts,
savoury salad, or sweet and sour chinese dishes. Can be used to glaze or to decorated a
leg of ham. It can also be chopped up and used it in pies and cakes.

 | VARIETY AND SEASON
|
SUGAR PINES: Small pineapple and has a golden prickly spines and
the flesh is extremely sweet. A very good pineapple to purchase.
SMOOTH CAYENNE: A summer variety pineapple, usually light green
to orange colour when ripe.
RED SPANISH: A winter variety, usually looks green when ripe.
