Marjoram grows in a compact bush about
50cm tall, with small soft grey green leaves. They have white flowers,
blue in close clusters at the tip of the stems. Both the leaves and
the stems have a pleasant aromatic flavour.
 | HISTORY AND ORIGIN
|
During the ancient days in Egypt,
marjoram was given to the sungod Osiris and was then used in the Roman
temples. Marjoram was known to be a symbol of happiness and to have it
grown on a grave meant eternal peace for the lost ones.
 | BUYING AND STORAGE
|
A fresh bunch of marjoram should be
stored totally immersed in cold water and should be used within 1 week.
 | PREPARATION AND USE
|
Use marjoram accommodating with
parsley, thyme and bay leaves in a banquet garni, and is also a ingredients
of mixed herbs. Use on salads, omelette, sauce and meat dishes.
