A member of the mustard family with large spinach-like
leaves. The root has a burning, sharp flavour with a aroma.
HISTORY AND ORIGIN
Native to Europe and was used in the 13th century in
Germany and Denmark as medicine. Bitter horse radish is eaten at the
Jewish Passover, symbolising to their bitterness of slavery to the Egyptian.
BUYING AND STORAGE
Select firm horse radish roots with brown scruffy-like
skin and white flesh. Store in a damp dark place or refrigerate in a
plastic bag for up to 3 days. Freeze for 6 months.
PREPARATION AND USE
Rinse and peel the root. Grate as needed and add to
soups, sauces and spreads. Use in seafood cocktails and mustards.
