A vegetable related to the melon, squash and pumpkin
family. The Cucumber comes in a cylindrical shape with a crisp tender skin,
which the colours varies from dark green/yellow/white. The Cucumber has a
juicy flesh cool to taste. Inside the Cucumber they is some soft edible
seeds surrounded by the translucent gel.
 | HISTORY AND ORIGIN

Native to Pakistan where the Indus River makes the land
muddy and fertile, and it's suitable for its growth. The phrase "cool
as a cucumber" is thought that on the hot day, the inside of Cucumber
will be six degrees cooler than the outside air.
 | BUYING AND STORAGE
|
Look for Cucumbers that are firm with brightly coloured
skin. Avoid limp, soft Cucumber and wrinkly ends. Refrigerate Cucumber
wrapped in plastic and will keep for up to 1 week.
 | PREPARATION AND USE
|
Wash well in cold water. Peel if desired. Excellent sliced
in salads. Can be eaten raw in hand, sandwiches or with dips. Great for
making cold soups. Can be pickled.
