Its a seedling plant with small bright green leaves on
tender white stalks.
 | HISTORY AND ORIGIN
|
Native to Europe. Cress tastes hot and peppery and often
bought in together with the sprouts of mustard seeds. With these two they
are sold as 'mustard cress'.
 | BUYING AND STORAGE
|
Choose fresh, upright, springy seedlings. Avoid limpy,
dull, discoloured Cress. Store in the refrigerator by covering in plastic
and use as soon as possible.
 | PREPARATION AND USE
|
Wash and drain. Snip seedlings off roots with kitchen
scissors. Can be used in salads, sandwiches, with eggs and as a garnish.
