A typical Caper bush is a prickly and
sprawling plant which comes with a tough, roundish dark leaves and it grows
up to 1m tall. The flowers are long with pretty-pink, or white single
colour, with whiskery stamens bloom but it will die 24 hours. The
edible part of the Capers are the flower buds which has not been opened yet.
Because of the capric acid that the Capers has, that is why they have such a
strong aromatic flavour, which is enhanced by picking.

It is native to the dry areas of the
Mediterranean. The flower buds which has been picked in wine vinegar,
were used as a condiment for many centuries.
 | BUYING AND STORAGE
|
Capers are available only as processed
condiment in pickling liquid form. They should be kept in the
refrigerator once they are opened and are not allowed to dry out.
 | PREPARATION AND USE
|
The most useful ways to uses this,
addition to sauces and vinaigrettes, soft cheese and in salads. Can also be
used with cooked vegetables, chicken, fish and lamb.
