DESCRIPTION

Brussel Sprouts look like miniature cabbage, it grows tiny heads at the base of the leaves along the stem and it has a bitter flavour.

HISTORY AND ORIGIN

It is thought to have been originated in the City of Brussels in Belgium, in the 13th century.

BUYING AND STORAGE

Choose small, brightly coloured Brussel Sprouts that are firm and compact. The small ones has the best flavour. Refrigerate fresh Brussel Sprouts in a plastic bag and will keep up to 3 days.

PREPARATION AND USE

Rinse well. Trim the outer leaves and cut an "X" in the bottom of the sprouts to allow the heat to penetrate. Cook by boiling, steaming, stir-frying or in the microwave oven until tender. Do not overcook. Use in soups, savoury dishes and casserole or as it is.
