The bay leaf tree can grow up to 15
metre. The leaves are strong dark green with shinny topside usually
4-8cm long.
HISTORY AND ORIGIN
The Latin name of the Bay tree comes
from Laurus meaning laurel and nobilis meaning famous. Bay leaves were
used to crowned heroes and statesmen. It is native to Mediterranean
countries.
BUYING AND STORAGE
Bay leaves can be pick off a tree and
use fresh. Look for crisp thick greenish leaves and store in
refrigerator up to 3 days or can be bought dried.
PREPARATION AND USE
Bay leaves can be used in garnish,
flavouring, stocks, casseroles, soups and as a marinate. The leaf is
usually removed before serving.
