Basil grows up to 75cm with curved,
plump looking, violet leaves and a sweet flavouring smell.
 | HISTORY AND ORIGIN

The plants name is derived from
basilikon phyton, Greek name for Kingly Herb. It was introduced in
Europe in the 16th century and was cultivated by monks and farmers as a
common addition to food.
 | BUYING AND STORAGE
|
When buying fresh basil, store in water
in the refrigerator and drained well before use. Use within 2-3 days,
can be dried.
 | PREPARATION AND USE
|
Leaves can be used whole or chopped as
a garnish for pasta dishes, salads, soups, sorbets or as flavouring, aroma
and decorative.
 | PROCESSING
|
Branches of basil can be hung upside
down to dry outside or for quick drying, wrap in microwave paper and put in
the microwave oven for 2-3 minutes on high.
